Before you start
- Plug in the waffle maker to heat up while you make the batter.
- Melt the butter: 15-20 seconds in the microwave.
Step by step
-
Step 1: Mix the dry ingredients
In the bowl, mix the flour, protein, baking powder and salt.
-
Step 2: Add the wet ingredients
Add the milk, eggs and melted butter. Whisk just until there are no big lumps.
It’s right if… A pourable batter, like pancake batter, that coats the spoon.
-
Step 3: Check the waffle maker
Wait until the light shows it is hot. If it is not non-stick or it is the first time, brush it with a little butter.
It’s right if… The ready light is on.
-
Step 4: Pour in the batter
For a small waffle maker, pour 60 ml of batter into the centre. For a large one, fill each plate about three-quarters full: the batter spreads when you close it.
It’s right if… The batter does not reach the edge.
-
Step 5: Cook without opening
Close and cook without opening. As a guide, about 3-4 minutes, but go by the cues.
It’s right if… Hardly any steam is coming out and the lid lifts without resistance. The waffle is deep golden.
If it goes wrong… If it tears and sticks when you open it, close it and wait 1 more minute. Next time, grease it better.
-
Step 6: Serve
Lift it out with a fork or a wooden spatula and repeat with the rest. Serve 2 small waffles per person, with blueberries and syrup if you like.

How to tell it’s going well
- Batter: pourable, like pancake batter.
- In the waffle maker: hardly any steam and the lid opens easily.
- When served: crisp outside, soft inside.
If this happens…
- The waffle sticks
- Wait until it stops steaming and grease the waffle maker before each batch.
- It is soft
- Give it 1 more minute and serve straight away: steam from the plate softens it.
- I have no waffle maker
- Same idea, different method: make the chocolate protein pancakes in a frying pan.
How to store it
- Best just made.
- In the fridge for up to 3 days. To crisp them up again, warm them in the toaster or in the waffle maker.
- They freeze for up to 3 months. Reheat from frozen in the toaster.
