Before you start
- Heat the oven to 175 °C conventional (160 °C fan).
- Put the paper cases in the tin.
- Melt the coconut oil if it is solid.
Step by step
-
Step 1: Mix the dry ingredients
In one bowl, mix the flour, protein and bicarbonate of soda.
It’s right if… An evenly coloured powder.
-
Step 2: Mix the wet ingredients
In the other bowl, whisk the mashed banana with the sugar, syrup, eggs, milk and oil.
It’s right if… A runny mixture with a few bits of banana.
-
Step 3: Combine the two
Tip the dry ingredients into the wet and fold with the spatula just until no flour is visible. Add the chocolate with 2-3 turns.
It’s right if… A thick but not stodgy batter. Overmixing makes the muffins tough.
If it goes wrong… If it is too thick, add 2-3 tablespoons (30-45 ml) of milk.
-
Step 4: Fill the cases
Divide the batter between the 12 cases, filling them almost to the top. Bake straight away: if the batter sits, they rise less.
It’s right if… About 75 g of batter in each.
-
Step 5: Bake
Bake on the middle shelf for 18-22 minutes.
It’s right if… A cocktail stick in the centre comes out clean and the top springs back when touched.
If it goes wrong… If the stick comes out with batter, 2-3 more minutes.
-
Step 6: Cool
Leave them in the tin for 5 minutes, then move them to a rack or plate. Let them cool for 10 minutes before eating.

How to tell it’s going well
- Before baking: thick batter, no dry flour visible.
- When done: the stick comes out clean and the top is springy.
- Once cool: moist, fluffy crumb.
If this happens…
- Tough or full of holes
- Mix less when combining wet and dry: just until no flour is visible.
- They do not rise
- Bake as soon as the batter is ready and check the bicarbonate of soda is in date.
- They stick to the paper
- Spray the cases with a little oil before filling.
How to store it
- At room temperature, in a sealed container, for 2 days. In the fridge, for up to 5 days.
- They freeze for up to 3 months: freeze them separately on a tray for 2 hours, then transfer to a bag.
