Before you start
- Heat the oven to 165 °C conventional (150 °C fan).
- Line the tin with baking paper.
- Melt the coconut oil and take the egg out of the fridge.
Step by step
-
Step 1: Mash the banana
In the bowl, mash the banana with the fork into a purée.
It’s right if… A purée with few lumps.
-
Step 2: Mix the wet ingredients
Add the yogurt, sugar, vanilla, oil and egg, and mix well.
It’s right if… An even mixture.
-
Step 3: Add the dry ingredients
Add the oat flour, protein, bicarbonate of soda and cinnamon. Mix just until no powder is visible, then add half the walnuts.
It’s right if… A thick batter that drops off the spatula in dollops.
-
Step 4: Fill the tin
Pour the batter into the tin, smooth it and scatter the rest of the walnuts on top.
-
Step 5: Bake
Bake on the middle shelf for 45-50 minutes.
It’s right if… A cocktail stick pushed into the centre comes out clean and the top is golden and firm.
If it goes wrong… If the top browns too much before it is done, cover it with foil for the last 10 minutes.
-
Step 6: Cool
Leave it in the tin for 10 minutes, lift it out with the paper and let it cool completely, about 50 more minutes.
It’s right if… Cold to the touch underneath too. If you slice it warm, the crumb turns heavy.
-
Step 7: Slice
Cut it into 8 slices with a serrated knife.

How to tell it’s going well
- Before baking: thick batter that drops in dollops.
- When done: clean stick and golden, firm top.
- When sliced, once cool: moist, close crumb.
If this happens…
- The centre is raw
- Bake for 5 more minutes and test again. A narrower, deeper tin needs longer.
- It is dry
- Use very ripe bananas, weighed without the skin, and do not overbake.
- It sinks in the middle
- Do not open the oven in the first 30 minutes.
How to store it
- In the fridge, wrapped or in a sealed container, for up to 5 days.
- It freezes for up to 3 months in wrapped slices. From freezer to microwave: 30-45 seconds.
