Before you start
- Weigh out all the ingredients before you turn on the hob.
- Peel the bananas. The riper they are, the sweeter the pancakes and the less they taste of banana.
- Have a plate and a clean tea towel ready for the cooked pancakes.
Step by step
-
Step 1: Grind the oats
Put the 120 g of oats in the blender and blend for 30-40 seconds.
It’s right if… It should look like fine flour, with no whole flakes.
If it goes wrong… If there are still pieces, blend for 15 more seconds and stir with a spoon in between.
-
Step 2: Add the dry ingredients
Add the protein, cocoa and baking powder to the ground oats and blend for 5 seconds to combine.
It’s right if… The powder is an even brown colour.
-
Step 3: Blend the batter
Add the eggs, banana and vanilla. Pulse briefly, just until you can no longer see dry flour.
It’s right if… A thick batter that drops slowly off the spoon. A few small lumps are fine.
If it goes wrong… If it is so thick it will not drop off the spoon, add 1-2 tablespoons (15-30 ml) of milk and blend for 2 more seconds.
-
Step 4: Heat the pan
Heat the pan over a medium heat for 2 minutes. Add a few drops of oil and spread them with kitchen paper.
It’s right if… A drop of water sizzles and evaporates at once. The pan should not smoke.
-
Step 5: Pour the pancakes
Fill the 80 ml ladle and pour 3 separate rounds. Spread them a little with the back of the spoon to about 11 cm across.
It’s right if… You get 6 pancakes in total, in 2 batches.
-
Step 6: Cook and flip
Cook for 2-3 minutes without touching them. Flip them once only and cook for 1-2 more minutes.
It’s right if… They are ready to flip when the top has puffed up, no longer looks shiny and the edges come away on their own.
If it goes wrong… If they break when you flip them, wait 30 seconds longer. If they burn outside and stay raw inside, turn the heat down a notch.
-
Step 7: Serve
Repeat with the rest of the batter. Serve 2 pancakes per person, with berries and honey if you like.
It’s right if… Inside they are fluffy and moist, not runny.

How to tell it’s going well
- Before cooking: thick batter that drops slowly off the spoon.
- In the pan: the top puffs up and loses its shine before you flip.
- When cut: fluffy, moist crumb with no raw batter in the middle.
If this happens…
- The batter is too thick
- Add milk a tablespoon (15 ml) at a time until it drops slowly off the spoon.
- They stick to the pan
- Grease before each batch and wait until the pan is hot before pouring.
- They are raw inside
- Slightly lower heat and 1 more minute on the first side. Make them thinner.
- They taste too much of banana
- Use very ripe bananas: the flavour mellows and they are sweeter.
How to store it
- Best eaten straight away.
- In the fridge, in a sealed container, for up to 3 days. Reheat for 20-30 seconds in the microwave or in the pan.
- They freeze for up to 3 months, separated with baking paper. Reheat from frozen for 1-2 minutes in the microwave.
