Before you start

  • Wash and slice the strawberries and slice the banana.
  • If you separate the eggs yourself, keep the yolks covered in the fridge for another recipe.

Step by step

  1. Step 1: Blend the batter

Blend the egg whites, oats, cottage cheese and protein for 30-40 seconds.

It’s right if… A very runny, smooth batter with no bits of oats.

  2. Step 2: Heat the pan

Heat the pan over a medium-low heat for 2 minutes and grease it with a few drops of oil and kitchen paper.

  3. Step 3: Pour a thin layer

Pour in about 60 ml of batter and swirl the pan straight away so it covers the base right to the edge.

    It’s right if… A thin, even layer.

  4. Step 4: Cook and flip

Cook for 1-2 minutes, until the edges lift on their own. Flip with the spatula and cook the other side for a few seconds.

It’s right if… The top is no longer runny before you flip.

If it goes wrong… If the egg white runs when you flip, the pan was too hot or it needed longer: lower the heat and wait 30 seconds more.

  5. Step 5: Fill and serve

Repeat until you have 4 crêpes. Fill each with banana and strawberries and fold. Serve 2 per person.

How to tell it’s going well

  • Batter: very runny and smooth.
  • In the pan: the edges lift on their own before flipping.
  • When served: thin and pliable, they fold without breaking.

If this happens…

It tears when flipped
Wait until the top is no longer runny and use a thin, wide spatula.
It is rubbery
Medium-low heat, not high, and only a short time on the second side.
It is thick
Less batter per crêpe (60 ml) and swirl the pan as soon as you pour.

How to store it

  • Best just made.
  • Unfilled, in the fridge, separated with baking paper, for up to 2 days. Warm for a few seconds in the pan.
