Before you start
- Heat the oven to 190 °C conventional (175 °C fan).
- Line the tin with baking paper or grease it.
Step by step
-
Step 1: Whisk the wet ingredients
In the bowl, whisk the eggs with the cottage cheese, milk, protein, vanilla and syrup.
It’s right if… A runny mixture with small curds of cottage cheese: that is normal.
-
Step 2: Add the oats
Add the oats, cinnamon, baking powder and salt, and mix.
It’s right if… A very runny mixture, with the oats floating.
-
Step 3: Pour into the tin
Pour it into the tin and spread the oats out evenly. Scatter the chocolate on top, if using.
-
Step 4: Bake
Bake on the middle shelf, not the top, for 40 minutes.
It’s right if… The centre is set: when pressed, no liquid comes out. The edges are golden.
If it goes wrong… If the top browns too much while the centre is still runny, cover with foil and bake for 5-10 more minutes.
-
Step 5: Let it rest
Leave it to cool for 10 minutes so it sets, then cut into 6 portions.
It’s right if… It cuts into portions that hold their shape.

How to tell it’s going well
- Before baking: very runny mixture.
- When done: set centre and golden edges.
- When cut: soft, cake-like portions.
If this happens…
- The centre is still runny
- Middle shelf, not the top, and 5-10 more minutes covered with foil.
- It is dry
- Keep the cottage cheese in and do not overbake.
- It crumbles
- Let it rest the full 10 minutes before cutting.
How to store it
- In the fridge, in a sealed container, for up to 4 days.
- It freezes for up to 3 months, in wrapped portions. Thaw in the fridge.
- To reheat: cover with damp kitchen paper and microwave for 45-60 seconds.
