Protein chia pudding

Chia seeds soak up liquid and thicken it into a pudding. With milk and chocolate protein you get a cream with the texture of the seeds, a bit like rice pudding. At least 30 minutes of resting.

Before you start

  • Make room in the fridge for the jars.

Step by step

  1. Step 1: Mix the milk and protein

Blend the milk with the protein, vanilla and salt for 10 seconds, or shake them in a jar with a lid.

    It’s right if… A smooth chocolate liquid.

  2. Step 2: Pour over the chia

Put the chia seeds in the container and pour the milk over them. Stir well with a spoon.

It’s right if… The seeds spread through all the liquid, with no clumps at the bottom.

  3. Step 3: Stir as it thickens

Leave it for 30 minutes, stirring every 10 minutes. That stops the seeds clumping.

It’s right if… After 10 minutes it is already starting to thicken.

If it goes wrong… If clumps of seeds form, break them up with a fork as you stir.

  4. Step 4: Chill and serve

Put it in the fridge until cold. Serve topped with strawberries or banana.

It’s right if… Thick and creamy, with the texture of the seeds. It does not become completely smooth.

How to tell it’s going well

  • When mixed: seeds spread out, no clumps.
  • After 30 minutes: thick, no clumps of seeds.
  • Final texture: a cream with seeds, like rice pudding.

If this happens…

It is runny
Give it longer: after a night in the fridge it thickens more.
Clumps of seeds
Stir every 10 minutes for the first half hour.
Too thick
Add 2-3 tablespoons (30-45 ml) of milk and stir.

How to store it

  • In the fridge, in sealed jars, for up to 3 days. Add the fruit when serving.
  • Not suitable for freezing.
