Before you start
- Line the tin with baking paper, leaving it hanging over two sides.
- Make room in the fridge for the tin, on a flat shelf.
Step by step
-
Step 1: Melt over a bain-marie
Put 3-4 cm of water in the saucepan and heat gently until it steams, without boiling. Set the bowl with the peanut butter, honey and coconut oil on top, without touching the water. Stir for 3-5 minutes.
It’s right if… A smooth, glossy mixture.
If it goes wrong… If you have no saucepan, use the microwave in 20-second bursts, stirring in between.
-
Step 2: Add the dry ingredients
Take the bowl off the heat. Add the oats, protein, flaxseed, cinnamon and salt, and mix with the spatula.
It’s right if… At first it looks dry. When you press it a little with the spatula, it holds together.
-
Step 3: Let it cool and add the chocolate
Wait 5 minutes for the mixture to cool a little, then add the chips. If it is hot, they melt.
-
Step 4: Press into the tin
Tip the mixture into the tin and press it down firmly with the spatula or the base of a glass, right into the corners.
It’s right if… A compact, even layer with no gaps.
-
Step 5: Chill
Put the tin in the fridge for 1 hour.
It’s right if… It feels firm and does not give when pressed.
-
Step 6: Cut
Lift the slab out with the paper and cut it into 12 bars with a large knife.
It’s right if… Clean cuts that do not crumble.
If it goes wrong… If they break, give it 30 more minutes in the fridge.

How to tell it’s going well
- Before pressing: the mixture holds together when squeezed.
- After the fridge: firm to the touch.
- When cut: bars that do not crumble.
If this happens…
- They fall apart
- Press harder into the tin and give them 30 more minutes in the fridge.
- The chips melted
- Wait until the mixture is just warm before adding them.
- They are too hard
- Take them out 10 minutes before eating.
How to store it
- In a sealed container somewhere cool for up to 1 week. In hot weather, better in the fridge.
- They freeze for up to 3 months, separated with baking paper.
