Before you start
- If you have no oat flour, blitz 30 g of oats in the blender until powdery.
- Check that your mug is microwave-safe and holds at least 300 ml.
Step by step
-
Step 1: Mix the dry ingredients in the mug
In the mug, mix the oat flour, protein, sugar and baking powder with the fork.
It’s right if… An evenly coloured powder.
-
Step 2: Add the milk
Add the milk and vanilla and whisk with the fork, scraping the bottom and corners well.
It’s right if… A smooth batter like thick cream, with no dry powder at the bottom.
If it goes wrong… If it is too thick to whisk, add 1 teaspoon (5 ml) of milk.
-
Step 3: Add the chips
If using, stir in half the chips and scatter the rest on top.
It’s right if… The batter does not come halfway up the mug: it needs room to rise.
-
Step 4: Cook in the microwave
Cook at 800 W for 50 seconds and check. If the centre is still shiny and wet, continue in 10-second bursts. It is usually done in 60-75 seconds.
It’s right if… It has risen, the top is dry and the centre springs back when touched.
If it goes wrong… Do not go past 75 seconds: every extra 10 seconds makes it rubbery. If your microwave is more powerful, start checking at 40 seconds.
-
Step 5: Let it rest
Leave the mug out of the microwave for 1 minute: it finishes cooking and you will not burn yourself.

How to tell it’s going well
- Before cooking: smooth batter, no powder at the bottom, less than half the mug.
- When done: risen, with a spongy centre.
- To eat: tender and moist; if it is rubbery, it was overcooked.
If this happens…
- Dry or rubbery
- Less time: check at 50 seconds and go on in 10-second bursts.
- It overflows
- Use a bigger mug, at least 300 ml.
- The centre is raw
- 10 more seconds and 1 minute of resting.
How to store it
- Eat it straight away: reheated, it dries out.
- You can make up the dry mix in a jar and add the milk when you want it.
